Cranberry Turkey Pizza

I’ve mentioned before I’ve made plenty of creative pizza concoctions. What better example than cranberry turkey pizza?

After we’re all sick of turkey sandwiches, here’s another option for leftover Thanksgiving turkey. Plus you can use up the leftover cranberries too!

Eight hour pizza

I began making the pizza at 10 am and we didn’t eat it until 6 pm. Don’t worry, prep time for this pizza isn’t supposed to be this long. With an unexpected power outage that lasted well past lunch time, lunch became supper. Needless to say the dough was a bit fluffier than usual!

Thin to win

To prevent the cranberries from overpowering the pizza, spread the cranberry sauce as thin as possible. You’ll be surprised to still use an entire 18 ounce can (which is a 1 3/4 cup equivalent if you are using Thanksgiving leftover cranberries.)

Helpers

I never have a lack of “helpers” when I make pizza. My children all love “decorating” the pizzas, which also serves as snack time. I just make sure to wait to sweep the floor under my helpers are done.

Blueberries!

My 2 year old son eyed up the pizza and enthusiastically announced, “Blueberries!” He was on the right track…but didn’t quite nail the berry. Both blueberries and cranberries are heathland berries, which means they typically grow in peat since they like acidic soil. Maybe a blueberry pizza could be a future concoction!

Topping it off

My daughter stopped after seven pieces when she saw me prepping banana ice cream. My son reminded us all to '“shut our ears” when I turned on the food processor. A great way to top off a fantastic meal!

Cranberry Turkey Pizza Recipe

  • 18 ounce can of cranberries (or 1 3/4 cups leftover cranberry sauce)

  • 1 cup diced turkey (or chicken)

  • 1 T. finely chopped fresh sage (optional)

  • 1/2 cup diced onion

  • 1 cup cheddar cheese (4 ounces)

  • 1 cup mozzarella cheese (4 ounces)

  • 1 pizza crust - my recipe here

Prepare a pizza crust and spread onto a cookie sheet. Spread cranberries on pizza crust in a layer as thin as possible. Sprinkle the sage, onions, and turkey on top. Cover with a layer of cheeses. Bake 25 min at 400F or until bottom of crust is golden.
