Banana ice cream- a sinless indulgence
With the stretch of hot weather, I’ve recently discovered a delicious, sugar-free and even healthy version of this summertime favorite - yes banana ice cream! I don’t know what I like better, that I can indulge in this ice cream guilt-free or whip up a batch so easily!
No ice cream maker, no problem
Most people may not have an ice cream maker, however, this recipe only requires a food processor! And it’s foolproof. (You can read about some of my not-so-foolproof ice cream experiences here!)
Simple and ready in minutes
I thought regular homemade ice cream was pretty simple with just six ingredients . But banana ice cream is just two ingredients! Instead of putting my ice cream maker in the freezer for 24 hours, I take ripe bananas and slice them and can put in the freezer for as little as an hour, throw in the food processor with a little heavy whipping cream and done!
The first time I made it, I saw the mercury rising outside and thought some ice cream would be yummy. So I sliced up the bananas on the counter, did a couple of chores, and rewarded myself after with the decadent treat faster than it would have taken me to run to the grocery store and back.
Healthy, but actually good too!
I had attempted a banana only ice cream a couple of years ago and was disappointed as it was obvious that it was a healthy imitation that fell short of ice cream. Recently, I decided to give banana ice cream a second chance, but I added some heavy whipping cream. I was amazed the transformation that a splash of heavy whipping cream made on the end result - the taste and texture are now mistakable for regular ice cream!
Better yet, my kids enjoyed eating the frozen sliced bananas as I was making the ice cream. Even though my daughter was shivering, she couldn’t stop eating the frozen banana slices! I was secretively hoping they’d ruin their appetite by snacking on the frozen coins as I whipped up a batch. My oldest asked me to stop putting them all in the food processor since she wanted to keep eating the frozen bananas - success!
Eat it fast
My husband was finishing up his work day at home when we made our last batch. Since it took him a few minutes before he came into the kitchen, there were only a few bites left.
As I washed up the food processor, I commented, “You really have to eat this fast,” as I observed how fast it melted. My husband responded, “Or else it’ll be gone.” I guess based on his point of view, that’s true too. But at least you don’t need to feel guilty when it’s all gone!
Banana ice cream recipe
4 ripe bananas
1/4 c. heavy whipping cream
1) Slice the bananas into coins and freeze in a single layer on a cookie sheet for a minimum of one hour.
2) Take the frozen bananas from the freezer and place in a food processor after slightly thawed.
3) Add heavy whipping cream and process until the texture is custardy (about 5 minutes) .
